Well, I got online and found several YouTube videos on how to check what was happening. I have a multimeter and tools. I first replaced the external water filter just to make sure it wasn't that, and it needed it. That wasn't the problem. I then removed the water inlet valve which was really easy. This was a 2000 model so rather than just replace the defrost timer which was visibly burnt on the terminals, we just did everything. The cold control, defrost timer, thermostat, defrost heater and the compressor capacitor were all replaced. I had the same issue on my older unit and tore it apart replacing one item at a time over a three month period so on an older one i suggest do it all while it is apart.

I removed to the cover to the coil, defrosted coil with a heat gun and checked the heater strip resistance. I set timer to defrost by hand to make sure everything was working.
